About this product
Large cardamom is dried over a fire rather than in the sun in most of the growing area, which is where the smoke comes from. Ours is from producers using improved bhatti dryers that keep the smoke indirect — the flavour is still there but it is not creosote.
Use it whole in braises and rice and take the pod out, or crack it and use the seed. It does not substitute for green cardamom in a sweet application and will ruin one if you try.
Moisture content on this lot is stated on the pack, because moisture drives both keeping quality and what you are actually paying per kilo of spice.

Shipping, duty & returns
Retail orders leave Kathmandu within two working days of payment clearing and are tracked throughout. Free over $150.00; a flat $24.00 below that.
Import duty and tax in your own country are not included and are payable by you. We declare goods at their real value.
Thirty days to return anything unused and in its original packaging. Food, tea, spices, honey and cosmetics are not returnable once opened, which is a food-safety position rather than a commercial one.
