Hard churpi puffs when it is heated: the trapped moisture flashes to steam and blows the structure open, the way pork crackling does. The result is light, crunchy and completely different in use from the bar it came from.
We puff it in an oven rather than frying it, so nothing is added — it is still milk, lime juice and salt, just a different shape.
